HOW TO COOK DELICIOUS AND FLAVORFUL LEMONGRASS AND CHILI CHICKEN RICE
- Prepare the ingredients
- Chicken: Rinse 500g of chicken with diluted salt water, drain well, then cut into bite-sized pieces (about 3-4cm). Marinate the chicken with 1/2 teaspoon of pepper, 1/2 teaspoon of salt, and 1/2 tablespoon of fish sauce for 15 minutes.
- Lemongrass: Finely chop 2 stalks of lemongrass.
- Chili: Finely chop 2-3 chilies, depending on your preferred level of spiciness.
- Garlic, shallots: Mince 3 cloves of garlic and 1 shallot.
- Stir-fry the chicken
- Sauté aromatics: Place a pan on the stove and heat 1 tablespoon of cooking oil over medium heat. When the oil is hot, add the minced garlic, shallots, and half of the chopped lemongrass. Sauté for 2-3 minutes until fragrant and lightly golden.
- Stir-fry chicken: Add the marinated chicken to the pan, stirring evenly over high heat for 5-7 minutes until the chicken is firm and golden brown.
- Season the dish: Add 1 tablespoon of fish sauce, 1 tablespoon of sugar, and 1/2 teaspoon of pepper. Stir well to let the flavors penetrate the chicken. Then, add the remaining lemongrass and chili, and continue to stir-fry for 3-4 more minutes.
- Add a little water (optional): If you prefer to have a sauce, you can add 50ml of water and simmer for an additional 2-3 minutes to allow the sauce to absorb into the chicken.
- Finish the dish
- Continue to stir-fry until the chicken is tender and well-seasoned, then turn off the heat.
- Serve the white rice on a plate and arrange the lemongrass and chili chicken on top.
- The dish will be even more appealing if you sprinkle some chopped scallions or ground pepper to enhance the flavor.
